Today I tried a new recipe, bobotie. I found it in a great cooking book my sister-in-law gave me a few years back called 200 Budget Meals by Sunil Vijayakar. I use this cookbook at least once a week, sometimes daily! It has a wide variety of recipes, all with relatively common, or at least affordable, ingredients (hence the title), and are quite easy to make. In fact, I think the budget part of the title could definitely apply to the time factor piece too!
PREP: 10 minutes
COOKING: 40 minutes
SERVES: about 4
Heat oil in a saucepan, add the onion and garlic and cook until soft and starting to brown. Add the curry pate and ground beef and cook, stirring and breaking up with a wooden spoon, for 5 minutes or until browned.
Add tomato paste, vinegar, golden raisons, and mashed bread. Season to taste with salt and pepper and transfer to a deep, medium ovenproof dish or an 8 inch heavy cake pan.
Mix together the eggs and cream in a bowl, season to taste with salt and pepper, and pour over meat mixture.
Bake in a preheated oven, 350 degrees F, for 30 minutes or until egg is set and golden brown. Remove from the oven and allow to cool for 10-15 minutes before serving.
