1 cup cooked quinoa
1 can of chickpeas, drained and rinsed
2 avocados, barely ripe, cut into small chunks
1/2 red onion, diced
1 cup cherry tomatoes, diced
1 Tbsp lime juice
2 garlic cloves, crushed
salt and pepper, to taste
PREP: 5-10 minutes
COOK: 10-15 (to prepare quinoa)
