1. Wash and chop all ingredients.
2. Mix in a large bowl.
3. Serve chilled.
Ok...so I guess I have been rather selfish with my kitchen experiments lately. I haven't posted a recipe since January! Jeesh, I guess we have been busy! Apparently, best bet, if you want to try out a new concoction, is to just stop by! Ha! But since summer is in full swing, so are all the local fruits and veggies; and, when you get cucumbers by the bag full at our local farm share, creative outpouring is imperative. (You can only eat so many cucumber cream cheese sandwiches if you know what I mean...) I found this recipe on the blog, The Healthy Foodie. I adapted it a bit, based on what I had around the house, but it turned out delicious. I decided to crack open a can of organic black beans, grill up some chicken with my favorite Cajan seasonings and throw it all together over lettuce. The results were quite tantalizing, and other than a bit of chopping, this meal was a cinch! The kitchen didn't even heat up :-) Yum! Enjoy!
